Funkcjonowanie systemu HACCP na przykładzie Zakładów Azotowych w Tarnowie – Mościcach S.A.

Abstract

Celem pracy jest omówienie funkcjonowania systemu zarządzania jakością HACCP na przykładzie Stacji Uzdatniania Wody Pitnej w Zakładach Azotowych – Tarnów. Całość zmierza do kompleksowego zaprezentowania systemu zarządzania jakością oraz ukazania korzyści wypływających z jego wdrożenia. W pracy przyjęto hipotezę, że dzięki wdrożeniu systemu zarządzania jakością HACCP producent, który wytwarza produkt bezpieczny dla zdrowia, prowadząc w odpowiedni sposób dokumentację produkcji jest bardziej wiarygodny dla potencjalnego konsumenta, przez co umacnia swoją pozycję na rynku w stosunku do konkurencji. Praca obejmuję analizę działań podejmowanych w trakcie wdrażania systemu. Systemem ten zapewnia wysokie standardy higieniczne warunków produkcji, przetwarzania żywności, kontroluje i opanowuje wszystkie zagrożenia istotne z punktu widzenia bezpieczeństwa konsumenta i ochrony jego życia. W wyniku przeprowadzonej analizy można stwierdzić, że po wdrożeniu systemu HACCP Stacja Uzdatniania Wody Pitnej w Zakładach Azotowych – Tarnów produkuje wodę przeznaczoną do spożycia przez ludzi, która spełnia wszystkie wymagania stawiane w Rozporządzeniu Ministra Zdrowia z dnia 29.03.2007 r.

The aim of this study is to discuss the operation of the HACCP quality management system based on the example of the Drinking Water Treatment Plant at Zakłady Azotowe – Tarnów. The whole of the study aims to provide a comprehensive presentation of a quality management system and the benefits of its implementation. The study adopts a hypothesis that thanks to the implementation of the HACCP quality management system the producer who manufactures a product that is safe for health becomes more credible in the eyes of a potential customer by properly running the documentation of production, thereby strengthening its position on the market in relation to the competition. The thesis includes an analysis of actions taken in the course of the implementation of the system. This system ensures high hygiene standards of the conditions of food production and processing. It controls and limits all hazards to the health and safety of the customers. As a result of the analysis, it may be stated that the introduction of the HACCP system in the Drinking Water Treatment Plant at Zakłady Azotowe – Tarnów enabled the production of potable water which fulfils the requirements in the Directive of the Ministry of Health from 29th March 2007.
